Pimento Cheese Jalapeño Poppers (Keto) 

INGREDIENTS


  • 5 jalapeños
  • 10 tablespoons Uncle Chris' Premium Pimento Cheese
  • 10 slices of bacon not thick cut

INSTRUCTIONS


  1. Preheat broiler to 500 degrees (or low if you cannot set the degree). Line a baking sheet with a cooling/wire rack.
  2. Slice the jalapeños in half lengthwise. Use a spoon to scrape out the seeds and core.
  3. Add 1 tablespoon of pimento cheese to each pepper.
  4. Wrap each jalapeño in 1 slice of bacon.
  5. Place the poppers on the baking sheet and place the baking sheet on the center rack in the oven. Do not put them on the high rack directly under the broiler plate.
  6. Cook for approximately 10 minutes. The bacon should be a chewy crisp and poppers should be softened.
  7. If needed, cook in 1 minute intervals after the 10 minutes is up if the bacon is not cooked enough. Do not let bacon get too crispy or it will not stay on the poppers.

Pimento Cheese Stuffed Burger Sliders

INGREDIENTS


  • 1 lb ground chuck
  • 1 tbsp Worcestershire sauce
  • ¼-½ tsp each salt and black pepper
  • 1 cup Uncle Chris' Premium Pimento Cheese
  • 6 Slider buns

INSTRUCTIONS


  1. Put pimento cheese in bottom of plastic baggie until filled about 1 ½ inches across bottom of bag. Roll into a "log" shape.
  2. Put baggie in freezer on level surface and freeze 2+ hours.
  3. Create 2 thin patties (about 3-½ inches wide) and put a ¾ inch slice of pimento cheese "log" between them. Pinch and smooth edges.
  4. Repeat until all beef has been used.
  5. Grill 4-6 minutes on each side (middle will still seem soft- Don't worry- It's just cheese!)
  6. Top any way desired!

Pimento Cheese Roasted Chicken

  • 1 (3 1/2 to 4 lb.) whole chicken
  • 1 ¼ cups spicy Uncle Chris' Premium Pimento Cheese
  • 1 tsp kosher salt
  • ½ tsp black pepper

INSTRUCTIONS


  1. Preheat oven to 375°F. Spread pimento cheese evenly under skin and over breasts and thighs of chicken. Sprinkle with salt and pepper.
  2. Place on a lightly greased rack set in a rimmed baking sheet. Roast in preheated oven until a thermometer inserted in thickest portion of thigh registers 165°F, about 55 minutes. Let rest 10 minutes before slicing.

"Some Like It Hot" Grilled Pimento Cheese Sandwiches

INSTRUCTIONS


  1. Choose your favorite flavor of Uncle Chris' Premium Pimento Cheese.
  2. Butter 1 side of each bread slice. Place 8 bread slices, buttered sides down, on a hot griddle or in a large skillet over medium heat.
  3. Spread 1/2 cup pimento cheese over each bread slice on griddle. Top each with 2 cooked bacon slices.
  4. Place remaining 8 bread slices, buttered sides up, on bacon. Turn sandwiches, and cook 5 to 7 minutes or until golden brown. (Pimento cheese should be slightly melted.) Serve with strawberry preserves.

Pimento Cheese Appetizers

INGREDIENTS


  • 1 package phyllo cups
  • 1/3 cup Uncle Chris' Premium Pimento Cheese
  • 3 strips bacon (diced and cooked until crisp)
  • 1 Tbsp diced green onion (optional)
  • 1 Tbsp chopped fresh parsley (optional)

INSTRUCTIONS


  1. Place phyllo cups on baking sheet.
  2. Spoon 1 teaspoon pimento cheese into each phyllo cup.
  3. Bake in preheated 350 degree oven about 5 minutes.
  4. Sprinkle with bacon bits.
  5. Bake another 5 minutes, or until cheese is melted.
  6. Garnish, if desired, with green onion and/or parsley.
  7. Serve while warm.

Cheese Ball with Pimento Cheese

INGREDIENTS


  • 1 pound sharp cheddar cheese, finely grated
  • 12 ounces Uncle Chris' Premium Pimento Cheese
  • 8 ounces cream cheese, softened
  • 3 Tbsp worcestershire sauce
  • 1 tsp chili powder
  • 1 tsp hot sauce (optional)
  • 2 Tbsp fresh parsley, chopped
  • 1/2 cup pecans, chopped

INSTRUCTIONS


  1. Combine three cheeses until creamy. 
  2. Add additional ingredients adjusting for personal taste. Mix well.
  3. Chill for 1-2 hours.
  4. Divide into 2 or 3 portions and roll into balls.
  5. Roll each ball in your choice of ingredients. Suggestions are below.

SUGGESTIONS


Roll cheese balls in one or more of these suggested combinations:

  • Bacon bits and chopped pecans, 
  • Chopped fresh herbs and cracked black pepper
  • Paprika/chili powder/pecans. 

Pimento Cheese Grits

INGREDIENTS


  • 4 cups whole milk
  • 1 cup Quick Grits
  • 1 tsp salt
  • 1/2 cup Uncle Chris' Premium Pimento Cheese
  • 1 Tbsp butter
  • 1 tsp Tony Cachere's
  • 1/2 tsp black pepper
  • 1/4 tsp crushed red pepper (optional)

INSTRUCTIONS


  1. Cook grits according to package directions with 4 cups whole milk and 1 tsp salt. This should take 10-15 mins.
  2. When grits are cooked to your liking, remove from heat and stir in remaining ingredients. Serve immediately!

SUGGESTIONS


You can vary this recipe by using 1% milk to make it thinner (this recipe will make thick grits) and adjust to your spice preference by using more or less red pepper flakes or using pimento cheese with or without jalapenos.

Pimento Cheese Deviled Eggs

INGREDIENTS


  • Makes: 12 eggs
  • 6 eggs, hard boiled, peeled, sliced lengthwise in halves and yolks in a separate mixing bowl
  • 2 Tbsp. Mayonnaise
  • 3 Tbsp. Uncle Chris' Premium Pimento Cheese
  • 1 Tbsp. (heaping) sweet relish
  • 1/8 tsp. sea salt
  • 1/8 tsp. coarse ground pepper
  • 1/8 tsp. red chili flakes
  • 2 Tbsp. Fresh flat parsley, chopped well + more for garnish
  • 1 Tbsp. Extra virgin olive oil

INSTRUCTIONS


  1. Mash the yolks with a fork. Add the mayonnaise, pimento cheese, relish, salt, pepper, chili flakes, parsley and blend well.
  2. Fill the egg whites. Sprinkle with additional parsley and drizzle with the olive oil.
